Make Tasty Allveggie Kabobs







Green peppers, cherry tomatoes, onions and mushrooms kabobs fresh from the grill. Throw in some rice pilaf and a crisp salad and you have a delicious and healthy veggie meal. While the veggies taste good au natural, there is a simple marinade that will make those kabobs quite tasty. This marinade will cover 4 to 6 kabobs, depending upon the type and size of vegetables selected.

Make Tasty All-Veggie Kabobs


1. Measure the tarragon vinegar and pour into the bowl or large measuring cup. Measure the ketchup and pour into the bowl. Measure the oil and pour into the bowl.


2. Measure the salt and pepper and pour into the bowl. Use the side of the knife to smash the garlic clove. Peel the clove and add to the bowl; there is no need to chop the garlic. Stir the marinade well.


3. Wash and peel-if necessary-the vegetables. Cut into equal sizes--1 to-2-inch cubes work best-and place in the large plastic container.


4. Stir the marinade again and pour over the vegetables. Put the lid on the container and set in the refrigerator for an hour, stirring every 15 minutes.


5. Heat the grill. While you are waiting, put the marinated vegetables on the skewers. Place on the grill and cook to your preference of doneness.
