Top Rated Weight Watchers Recipes

The Weight Watchers food plan is based on every food getting a points value depending on its calorie, fiber and fat content. Homemade foods tend to be lower in points than restaurant food, in general, so Weight Watchers members make a habit of cooking and sharing favorite recipes. The most popular ones have been passed around the meetings and message boards for years, and are member favorites for their flavor and low point values.

Crockpot Salsa Chicken

Put four boneless skinless chicken breasts in a crock pot, sprinkling each breast with low-sodium taco seasoning. Pour half a jar of your favorite commercial salsa over the entire contents. Cover and cook on low for 10-12 hours. Right before serving stir in 1/2 C. low fat or fat free sour cream and cook on high for 10-15 minutes until slightly thickened. Serve over brown rice.

Caramel Pumpkin Spice Cake

Stir together one 14 oz. can of pure pumpkin (not pumpkin pie mix), 1/2 cup water and 1 box of your favorite spice cake mix. Pour into a greased and floured cake pan or muffin pans. Cook as directed for spice cake. The cake will be very moist. Serve topped with low fat or fat free caramel dessert topping.

Diet Soda Cake

Mix together one can of diet soda and any box of commercial cake mix. Pour into a greased and floured cake pan and cook as directed on cake mix box. Serve topped with fat free whipped cream. There are many different flavors to make from this recipe. Try orange soda with white cake, cherry soda with chocolate cake, lemon lime soda with lemon cake or ginger ale with spice cake.

Chicken Cordon Bleu

Pound four boneless skinless chicken breasts with a kitchen mallet or the edge of a saucer until about 1/4 inch thick. Place two slices of low fat ham, such as Deli Select, on each breast, and top with one wedge of Laughing Cow cheese. Fold in the two sides and roll up the chicken, and secure with a toothpick. Dip in water and then panko bread crumbs, bake at 350 degrees for 25 minutes or until chicken is done.
